Definitely a Southwestern vibe going on with the salsa and the beans, not to mention the fresh chorizo sausage.  I’d call this huevos rancheros except for the tortillas being more of a side than a base.  I cut the flour tortilla into wedges and deep fried them before popping them into the toaster with a sprinkle of cheese.  I’m sitting here kicking myself because I have a couple of avocados I could have added to the mix but forgot about them until way too late.  A dollop of guacamole or a few slices would have added more interest and color.  I have a sad:(

    • Thanks! I’m torn trying to decide what style of breakfast is my favorite. Right now I will have to go with the Tex-Mex, or at least my version of what that is.

    • It’s pretty much a what you see is what it is dish. Canned black beans, rinse well, mix with drained canned or frozen yellow corn, minced peppers of whatever flavor you prefer, a dash of lime juice, diced onions – red onions are pretty in this – chopped cilantro is popular if you like it, minced garlic, a splash of olive oil, a teaspoon or two of ground cumin works well. Mix in a bowl and let sit in the fridge. Add diced tomatoes to kick it up, season with ground dried peppers and salt it to taste. Hot peppers add zing, green or red jalapenos, wave at it with a fresh habanero. Ratios and measures are not important, use your own sense of proportion and adjust if you need to.
