Thursday Night Menu: Kiss a Vet Edition

First and foremost, it’s Veterans’ Day, so go kiss a vet. I’ll wait…..Okay, now back to tonight’s menu. As winter settles in (we had our first snow last night) I find I want more vegetables. (Pause for a moment as my mother picks herself up off the floor). So a primavera sounded like a good recipe for the menu tonight.   And it is cranberry season, so dessert with cranberry is a must.   As Thanksgiving nears, if you have any cooking questions, ask away. If I don’t know the answer, I will use my various resources (I’m looking at you Kirk Spencer) to find one for you.

On the board tonight:

  1. Pasta Primavera
  2. Crusty Bread
  3. Cranberry Apple Cobbler

Pasta Primavera

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 tsp crushed garlic
  • 1 ea. green, red, yellow bell pepper, sliced
  • 8 oz frozen sliced carrots
  • 1 zucchini, cubed
  • 1 yellow squash, cubed
  • 14 oz can diced tomatoes
  • 1 tsp ea, crushed rosemary, basil, oregano
  • 12 oz bowtie pasta, cook according to package directions
  • ½ cup grated parmesan

Put water on to boil. Heat oil in skillet, sauté onion & garlic, until onions are translucent. Add peppers, sauté for 2-3 minutes, add the rest of the fresh vegetables and more oil if necessary. Sauté for 5 minutes, then add tomatoes & spices. Let simmer for 10 minutes. Drain cooked pasta well. In serving bowl, add pasta, vegetable mixture, & parmesan. Toss well and serve immediately.

Cranberry Apple Cobbler

  • 5 cups peeled & sliced apples*
  • 1 ¼ cup sugar
  • 1 cup raw chopped cranberries
  • ½ teaspoon cinnamon
  • 1 cup water
  • 2 tbsp butter, melted

2 qt baking dish, buttered

Mix ingredients together and spread in the bottom of baking dish. Bake at 375° for 15 minutes, until bubbly.

Topping:

  • ¾ cup flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/8 tsp salt
  • ¼ cup butter
  • 3 tbsp milk

Mix flour, sugar, baking powder and salt in bowl, cut in butter until mixture is crumbly. Stir in milk until soft dough forms. Drop by tbsp onto hot apple mixture. Bake additional 30 minutes until golden brown.

* if you want to substitute equivalent amount of pie filling, reduce sugar to ½ cup.

  • 1 small onion
  • 1 tsp crushed garlic
  • 1 ea. green, red, yellow bell pepper
  • 8 oz frozen sliced carrots
  • 1 zucchini
  • 1 yellow squash
  • 14 oz can diced tomatoes
  • 12 oz bowtie pasta
  • 4 oz grated parmesan
  • 5 apples
  • 1-1/2 cup sugar
  • 1 cup raw chopped cranberries
  • 1 stick butter

Also: Milk, salt, pepper, baking powder, flour, cinnamon, rosemary, basil, oregano, olive oil

Thursday Night Menu: Tropical Nights Edition

Had a little trouble deciding what to post tonight. We’ve been pretty busy at work and we are all a bit tired, when I asked the guys what I should post, ordering pizza instead of cooking won out.  I pulled three different menus before I decided on a little taste of Sanibel Island. I like the fresh flavors in this menu and I really enjoy tuna and swordfish. The Butter Pecan Turtle Bars are as decadent as they sound, and a breeze to make. You’ll see the Chunky Vegetable Soup recipe later this week and next Thursday I’ll post the other menu I pulled (you’ll just have to wait and see what that is). We had the most amazing rain shower last night; it was like the skies just opened up and poured water from a bucket for about ½ hour. The rest of the night was a steady rain with thunder and lightning, great sleeping weather. Spring has definitely arrived and recipes will begin to reflect that. JeffreyW is further south than I am, so his photos have made me long for warm weather and green things. If you haven’t seen his wonderful slideshows, check them out when you have time.

On the board tonight:

  1. Fish Tacos
  2. Black Bean Tropical Salad
  3. Butter Pecan Turtle Bars

Fish Tacos

  • 1 large mango, peeled & chopped
  • ½ large tomato, chopped
  • 1 small cucumber, chopped
  • ¼ cup chopped fresh cilantro
  • 3 green onions, chopped
  • 1 jalapeño, chopped
  • 2 tbsp limejuice
  • 8 taco size flour tortillas
  • 1 lb halibut, swordfish or tuna, 1” thick
  • ½ tsp Jamaican jerk seasoning
  • 2 cups shredded lettuce

Combine mango, tomato, cucumber, cilantro, green onion, jalapeno in bowl. Toss with 1 tbsp limejuice and set aside.  Wrap tortillas in foil and warm in the oven or on the grill (keep away from coals) Drizzle remaining limejuice over fish, sprinkle with jerk and grill or broil for 5 to 9 minutes, until fish flakes easily. Cut fish into chunks, fill each tortilla with 1/8 of the fish, fruit mixture and lettuce. Serves 4

Black Bean Tropical Salad

  • 1 red pepper
  • 1 yellow pepper
  • 1 avocado, cubed*
  • 1 to 2 jalapeños
  • ½ large tomato, chopped
  • ½ head red leaf lettuce, washed
  • 14 oz can black beans, drained

Seed & slice peppers & jalapenos. Add everything to serving bowl and toss with dressing.

*easiest way to slice an avocado is to cut in half, remove pit, cut cubes with a knife, then scoop out.

Dressing:

  • 3 tbsp lemon juice
  • 2 tbsp limejuice
  • ¼ cup light olive oil
  • ¼ tsp crushed garlic

In jar or mixing cup, mix all ingredients together well.

Butter Pecan Turtle Bars

  • 2 cups unbleached flour
  • ¾ cup brown sugar, packed
  • ½ cup butter, softened
  • 1 ½ cups pecan halves

Topping:

  • ½ cup brown sugar, packed
  • 2/3 cup butter
  • 12 oz milk chocolate chips

Combine flour, brown sugar and 1/2 cup butter; blend until crumbly. Pat mixture firmly onto bottom of pan. Sprinkle pecan halves over the unbaked crust.

Topping: In small saucepan, combine brown sugar & butter. Cook over medium heat, stirring constantly, until mixture begins to boil. Boil for one minute, stirring constantly. Drizzle caramel over pecans and crust. Bake at 350° for 18-20 minutes or until caramel layer is bubbly and crust is light brown. Remove from oven and immediately sprinkle with chocolate chips. Spread chips evenly as they melt. Cool completely before cutting.

  • 1 small cucumber
  • 1 bunch cilantro
  • 3 green onions
  • 3 jalapeños
  • 8 taco size flour tortillas
  • 1 lb halibut, swordfish or tuna, 1” thick
  • 1 head red lettuce
  • 1 red pepper
  • 1 yellow pepper
  • 1 avocado
  • 14 oz can black beans, drained
  • 2 cups unbleached flour
  • 2 cups brown sugar
  • 2 sticks of butter
  • 1 ½ cups pecan halves
  • 12 oz milk chocolate chips

Also: lemon juice, limejuice, Jamaican jerk seasoning, light olive oil, crushed garlic

Thursday Night Menu: Garlic, Garlic Edition

I know this sounds like a crazy recipe, but the Garlic, Garlic Chicken is a keeper.  The garlic roasts to a nice, nutty, sweet flavor, perfect with a slice of bread.  Friends made this for me and after the first bite, I was sold, I couldn’t believe how good it was.  The Sliced Pepper Salad came about because I was at the store last week and they had a huge sale on peppers of every color.  Each one has a different flavor, so I didn’t want to do much too overwhelm that, but you can add sliced onion if it appeals to you.  Get a really good Artisan bread and you’ve got a dinner that takes less than 20 minutes to prep.

On the board tonight:

  1. Garlic, Garlic Chicken
  2. Loaf of a good crusty Artisan bread
  3. Sliced Pepper Salad
  4. Hot Apple Cider with Ginger Snaps

Garlic, Garlic Chicken

  • 5 lb roasting chicken
  • 1/2 cup of wine
  • 1/2 cup of chicken broth,
  • salt & pepper
  • 40 cloves of garlic (unpeeled).

 Wash and dry the chicken, remove any giblets.  Add all ingredients into a roasting bag and roast for about an hour (follow cooking bag instructions, usually about 350 degrees, use a meat thermometer to check chicken temp).  Remove chicken to a platter and place garlic and sauce in a serving bowl.  The garlic can be squeezed out of the skins at the table onto the fresh bread.  Alternately, you can take the broth, reduce it and then add the peeled garlic into that. It makes a very nutty, garlic-y kind of gravy.

Sliced Pepper Salad

  • 1 each: red, yellow, orange & green pepper, washed & sliced
  • 1/4 to 1/2 cup vinaigrette dressing
  • 1 head bib lettuce, washed, dried & torn

Toss peppers and vinaigrette dressing and let marinate 30 minutes.  Serve on a bed of bibb lettuce.

Shopping List:

  • 1 5lb Roasting Chicken
  • 40 Cloves of Garlic (about 4 bulbs)
  • 1 loaf Artisan Bread
  • 1 each: Red, Yellow, Orange, Green peppers
  • 4 oz vinaigrette dressing
  • 1 head bibb lettuce
  • Ginger snaps
  • 1 gallon apple cider

Also: chicken broth, wine, salt, pepper

Thursday Night Menu: Beef Stew & Biscuits

There seems to be caramel apple dip on my computer keyboard. I don’t want to talk about it. Anyway, it is time for the Thursday menu.  In honor of the fall colors, it’s time to break out the slowcooker and make a traditional menu. How nice is it to come home from a day’s work or outdoor chores like raking leaves and have a hearty beef stew waiting for you? Add some biscuits and baked apples and you have the perfect fall dinner. On the board tonight:

  1. Beef Stew
  2. Wheat Biscuits
  3. Baked Apples

Beef Stew

  • 1 lb lean stew meat
  • 1 small onion, quartered
  • 4-6 small potatoes, quartered
  • 8 oz baby carrots, halved
  • pinch of rosemary
  • 2 bay leaves (remove before serving)
  • ½ tsp ea. salt & pepper
  • 1 tsp crushed garlic
  • 7 cups water
  • 3 tbsp flour

Place meat, onion, potatoes, carrots & spices in slowcooker, add 6 cups water and cook according to slowcooker directions, (usually 8 to 10 hours on low). Before serving, turn heat to high, mix 1 cup water and flour completely, add to stew, stirring constantly, and cook until thickened.

Wheat Biscuits

  • 1-1/2 cups white flour
  • ½ cup whole wheat flour
  • 4 tsp baking powder
  • ¾ tsp salt
  • 1/3 cup shortening
  • ¾ cup milk

Mix dry ingredients together, cut in shortening, add milk. Stir quickly with a fork until completely moistened, don’t over mix. Kneed gently on floured surface for 10-12 strokes. Roll out to ½ inch thick, cut into biscuits. Place on baking sheet and bake at 450° for 10-12 minutes, until golden brown.

Baked Apples

  • 4 large apples (McIntosh, Honey Crisp, Gala, etc)
  • 4 cinnamon stick
  • ¼ cup raisins

Core apples, place in baking dish, fill each core with a cinnamon stick and a few raisins. Add 1inch of water and bake at 425° until tender (about 30 minutes, though it depends on the size of the apple).

This menu serves 4.

  • 1 lb lean stew meat
  • 1 small onion
  • 4-6 small potatoes
  • 8 oz baby carrots
  • 1/3 cup shortening
  • 4 large apples (McIntosh, Honey Crisp, Gala, etc)
  • 4 cinnamon sticks
  • ¼ cup raisins

Also: rosemary, bay leaves, salt, pepper, garlic, white flour, wheat flour, baking powder, and milk

What’s For Dinner?

The What’s 4 Dinner website has been down for a while.  It’s back up now, not completely redesigned but functional.  So if you tried to take a look recently and had trouble, it should be fine now.  That’s one check mark off my ever lengthening things to do list.  Thursday Menu tomorrow and Men Who Cook on Friday.  Until then…
