I’ve received requests for more marinades as summer winds down. We’ll start with this. Serve with rice and garden vegetables for a great meal.
Spicy Lime Cilantro Chicken:
- 4 boneless chicken breasts
- ½ cup limejuice
- ¼ cup chopped cilantro
- ¼ cup sliced pickled jalapenos and juice
Place ingredients in a zip-lock bag and marinate overnight. Remove from marinade and broil or grill for 15 minutes, turning every 5 minutes, until breasts are cooked.
