Kid Friendly: Burrito Pie

If you haven’t noticed, I like having themes I can bounce back and forth to during the week.  Since JeffreyW has joined us, Men Who Cook has kind of become a permanent installment, so I felt it was time for something new.  When I create my weekly menus, I always make Friday a kids’ menu.  Usually they’re kid favorites and easy to cook, in case the kids really want to help.  This is a quick and easy favorite:

Burrito Pie

  • 1 lb hamburger
  • ½ onion, chopped
  • 15 oz green chili sauce (favorite flavor – chicken, pork, medium, hot, etc)
  • 14 oz diced tomatoes
  • salt & pepper to taste
  • ¼ tsp cumin
  • 1 can refried beans (opt)
  • 8 count flour tortilla shells
  • 8 oz shredded pepper jack or cheddar
  • 8 oz shredded lettuce
  • 1 tomato, diced

8×8 glass baking dish, lightly oiled and skillet

Brown ground beef & onion. Add green chili sauce, canned tomatoes & spices. Tear tortillas into quarters, put one layer on the bottom of the baking dish. Add a portion of the beef mixture, (opt beans) and cheese. Top with tortillas, beef mixture, cheese, etc. until you fill dish. Last layer should be cheese. Bake at 350° for 25 – 30 minutes. Let sit for 5 minutes. Top with lettuce and fresh tomato
