Something for the kids…okay, really it’s for us, because nachos are a great treat anytime. These a really tasty version of nachos. Make a batch, grab the beverage of your choice and kick back for some awesome basketball tonight.
Black Bean and Corn Nachos
- 14 oz can black beans, drained
- 8 oz can corn, drained
- 8 oz salsa
- 8 oz shredded cheddar cheese
- 2 jalapenos, sliced or 2 tbsp pickled
- 16 oz bag tortilla chips
baking sheet, greased or use parchment paper
Make sure beans & corn are drained very well (you may want to put them in a strainer to drain while prepping everything else). Combine black beans, corn & salsa together. Spread ½ chips in a single layer on baking sheet. Top with bean mixture. Top with remaining chips, spread cheese evenly over chips, top with jalapenos and bake at 450° until cheese is bubbly. Serve with large spatula.
