Hot & Sweet Penne Pasta

This is a nice, spiced up pasta dish that takes about 20 minutes to put together and serves 4.  Add a salad for a complete dinner.

Hot & Sweet Penne Pasta

  • 12 oz penne pasta
  • ½ lb lean ground beef
  • ¼ lb spicy Italian sausage
  • ¼ lb sweet Italian sausage
  • ½ onion, chopped
  • 2-14 oz can diced tomatoes
  • 8 oz diced carrots
  • 1 green pepper, chopped
  • 2 tsp basil
  • 1 tsp oregano
  • 1 tsp crushed garlic
  • ½ cup shredded mozzarella
  • ¼ cup grated parmesan
  • garnish: red pepper flakes & parmesan

2 saucepans

In the large saucepan cook penne according to pkg. directions. If your sausage came with casing, remove. In second saucepan brown beef & sausage, add onion, green pepper and carrots and cook for 2-3 minutes until onion is translucent. Drain excess grease add tomatoes and spices. Mix well and let simmer 10-15 minutes. When penne is done, drain very, very well (dab with a paper towel to really dry). Toss penne, meat mixture and cheese in large serving bowl. Add garnish & serve.
