Taco Seasoning

We had tacos again last night.  We have them designated as our new favorite thing.

I used the only packet of taco seasoning we had the other day so I went to the web to find a recipe that would work and found a very good one right away.  I made up a batch using his ingredient amounts and put it away for later.

Here’s the ingredient list:  1 T chili powder, 1/4 t garlic powder, 1/4 t onion powder, 1/4 t crushed red pepper flakes, 1/4 t dried oregano, 1/2 t paprika, 1-1/2 t ground cumin, 1 t salt, and 1 t ground black pepper.  I whirled everything to powder in my spice grinder.

I used some of it last night and it is very good, better than the store bought packets.  I like that you can vary the recipe to your own taste.  I may cut back on the salt next time and add more red pepper.  I suppose it isn’t necessary, but I mixed a slurry of corn starch in about a half cup of water and added it to the pan after adding the seasonings to the browned meat.  It helped to distribute the flavors throughout and reduced to an interesting gravy.
