Mmm… BBQ pork and Copycat Slaw

And twice fried potatoes, of course.  The slaw was an afterthought but it’s worth mentioning again since it’s been a good long time since I posted a link to a recipe for it.  There is a whole recipe industry centered on providing instructions on how to cook your favorite fast food outlet’s signature dishes.  I’ve tried a few of the recipes claiming to replicate Colonel Chicken’s (a name I have affectionately bestowed) fried chicken.  I usually fail but I have had some good fried chicken come from the experiments.  I think the pressure fryers are key to success but I won’t discount the “secret” ingredients.  The pork is a batch from the smoker with a good squirt of Sweet Baby Ray’s bbq sauce into the skillet while the meat warmed.  I usually add the sauce at the table since my preference is for a hotter sauce but I went with Mrs J’s fave today and added some heat via a garnish of pickled jalapenos.
