Sure, you can have anything you want for breakfast! This one has pinto beans cooked with ancho and chipotle chili powders and a bit of smoked ham hock. Rolled up with the beans is a fair handful of shredded cheddar that melted nicely. It’s plated with hot sauce and crumbled queso fresco with a sprinkle of diced sweet peppers for a garnish. Those fresh habaneros are pretty, but deadly. I think if one was diced finely and cooked with the beans the result would be hot but bearable.
