Smoked Shoulder

20160804_183655(1600x1200)A large limb broke off one of our peach trees during some wind that accompanied a thunderstorm last week. I sawed it into pieces suited to use in my little electric smoker and this is my first use of them.  The shoulder spent nearly 24 hours in the box, I used several pieces of the wood and managed to keep wisps of smoke curling from the vent throughout.20160804_183904(1600x1200)My rub was heavy with sugar and garlic and also included ground coriander, cumin, chili powder, paprika, onion powder, and salt.20160804_184958(1600x1200)I gave it a rough chop today, it’ll spend the night in the fridge and we’ll start working it down tomorrow, sammich by sammich.
