Grilled chicken on white corn tortillas with pico, refried beans, cheddar, pickled peppers, guacamole, lettuce, and crema. That’s crema on the tacos, the guacamole shares the little dish with a sour cream dip.The local Kroger store is increasing their stock of South-of-the-border items but they are definitely not going overboard with them, more’s the pity, but for a Midwestern market to even nod in that direction is better than it was not so long ago.I’ve had this taco gadget for a while and took this opportunity to try baking the tortillas in my toaster oven. Sadly, the tortillas were stale (from sitting atop the refrigerator in their bag for a month or more) so it wasn’t a fair test. The edges turned to shoe leather after 7 minutes at 375 despite a spray of canola oil. I will revisit this.
