Made a wilted lettuce salad with some of the bacon grease, that’s the Lettuce part of this one – works great! We use rice vinegar or red wine vinegar with a little water and some Splenda in lieu of the sugar. I measure nothing. Taste it, if too tart add more water and blah blah blah. You won’t need nearly the half cup of bacon drippings they use in their recipe, you can use a couple of tablespoons of olive oil instead or in addition to the bacon grease. It’s just a warmed vinaigrette. I make the dressing ahead of time and pop it into the microwave when I need it.
