More Stuffed Peppers

Our peppers are going gangbusters so I didn’t mind going for them again, I had made plenty stuffing for more and added to that with some burrito fillings from last night – refried beans, tomato salsa, red enchilada sauce, smoked chicken breast, and cheese.

One thing I wanted to particularly mention was that I steamed the cored peppers for about 8 minutes and filled them with stuffing that had been zapped in the microwave.  I sprinkled more cheddar on them and nuked them for another 30 seconds.  Went from fresh picked to ready to eat in 20 minutes.
