Crockpot Italian Beef

Kroger had chuck roasts cheap the other day.  I plopped this one into my slow cooker with a bunch of onions and garlic, added stock and red wine plus dried herbs that were appropriate – basil, thyme, oregano, parsley, etc.I left it overnight on low – it shut itself off sometime during the night,  Not sure what the time limit is on this thing, it’s the first time I let it go this long and didn’t know it would quit on me.  The beef was still warm.
Remove the meat to make defatting the broth easier.  I set it outside in the cold so the fat would harden on the top.  Break up the beef and then recombine.I kept some out for a sammich and put the rest into plastic containers for freezing.  Later I’ll vacuum seal the frozen blocks to reclaim the containers for the next job.
