We’re marking the occasion of the first blueberry harvest with a pie. This one has a crumb topping along with a crumb bottom crust. The topping was made of ‘nilla wafers spun up in a food processor with some cold butter and Splenda. The bottom was similar but the crumbs were soaked with melted butter and then pressed into the bottom of the dish.We were a bit short of blueberries so we added some long frozen raspberries to the filling. By the time they were thawed they were pretty much mush but the cornstarch slurry we added firmed them up nicely.Bitsy approves the vanilla ice cream but she’s leery of the berries.
