20190730_175016 (1600x1200).jpgI’m not sure what to call this.  I started with leftover red beans and rice, added a can of tomato bits, sliced jalapenos, a chopped onion, some chicken stock, garlic and onion powders, some Creole seasoning, a small bag of frozen cut okra, and simmered all that for a while.  I added the cooked shrimp last, just before serving.  It’s a dish somewhere between gumbo and jambalaya.
