Mushroom Soup

Scratch made Hungarian mushroom soup is pretty easy and it’s delicious.  We like it so much that I made a double recipe – it’s better the next day.  I think the final color will depend on the type of mushrooms and the paprika you use, both the kind and the amount.  Feel free to improvise.We were thinking that bacon would work in this soup, maybe as a generous garnish .

  1. I’m going to try this one. I think I’ll take your suggestion for bacon, but not as a garnish. I’ll start by chopping the bacon into small chunks, then cooking it until it’s just starting to crisp. Then add the onions to saute in the bacon grease, add the garlic, then the mushrooms. Reserve, then follow the remaining steps.

  2. Looks like a good one. I might try it with beef broth next time, I’ve used chicken stock for mine. We just finished off our last batch Saturday night.
