I’m a fan of French onion soups and dips so when I ran across a Tweet mentioning French onion chicken I took a closer look.I like sweet onions so that’s what I used. Don’t try to hurry the onions – they will get there.I used chicken tenders, wishing afterwards that I had used more of them. All the recipes I looked over called for chicken breast meat but boneless thighs would work great.I steamed carrots and cauliflower and dumped them into the sauce because the puny tenderloins looked lonely. I put on some shredded Swiss and shredded pizza cheeses. We like Zatarain’s boxed wild rice mix so the chicken was served over a bed of that.
