Lazy Boy’s Tartiflette

We watched Chef John make this the other day:

I decided to do something similar, although definitely a low-rent version.I stayed with the basic cheesy potato casserole but didn’t try to find that nice cheese.  I layered the potatoes and the bacon/onion mixture and then poured a cheddar- Monterey jack cheese sauce over that.  I made the sauce using milk with the sodium citrate additive to make a nice smooth sauce and then sprinkled on a buttered panko topping.  It spent nearly an hour in a 350 oven.This got an enthusiastic thumbs up from Mrs J.  We had it for lunch today and she thought that we should have it again for supper.  I imagine the fancy cheese would improve the taste so much I would want to marry it.
