More Soup

Whenever I start building veggie soups I find it difficult to stop adding stuff.  More than often the project requires transfer to a larger cooking vessel lest the soup slop over the edge while stirring.
The old joke goes: “The soup du jour was great the first time I ordered it but it’s never been the same since!”   My veggie beef soups are a little different every time I make them because of the changing contents of the pantry and freezer  I like to think that the broth gets better every time, too.
