We made crockpot Italian beef overnight from one of those roasts from the  grass fed steer.  It was good on the freshly made buns.I’ve been seeing mention of 40 minute buns in comments at various other venues.  The recipe is identical to the King Arthur recipe for buns I’ve been using except to speed things along the 40 minute version doubles the yeast to 2 tablespoons [ETA and uses a bit less salt].  I may try it some time.
