Mmm… Mac & Cheese

Made with the modern method using cheddar and jack cheeses.  I dissolved the citrate into a splash of water and then added milk for most of the liquid.  Seasoned with nutmeg and dry mustard and baked with a buttery panko topping until it bubbled around the edges.The sammich is on a Kroger deli bun that I thawed and toasted. It’s smoked pork with giardiniera.
