It’s handy having lots of freezer capacity.  Kroger was selling standing rib roasts for stupid cheap – less than $4/lb – so we bought a lot.  The butcher was happy to cut the rib bones free and slice the meat.  Yeah, we paid for the bones but they made some really good beef broth.   The kind that jiggles like jelly when chilled.  We saved the rib steaks in suitable portions in seal-a-meal vacuum bags.  They go straight from the freezer to a sous vide setup in the morning, for a steak dinner in the evening.
We were in the store yesterday for a few items while we were out and about and they were selling the same steak as is on the platter for $10/lb, on sale from $16/lb.
