A neighbor gifted us some deer meat after the last season and it’s been in the freezer since. I decided to grind it all for sausage. I added some beef fat to bring it up to a 75/25 lean to fat ratio, tossed in some dehydrated jalapeno, and doubled the black pepper and garlic. I used garlic powder in addition to the plain salt I subbed for the garlic salt.
It’s very good sliced warm fresh from the oven.
