Carrot Cake

We like the Allrecipes version with pineapple.  I had 2+ cups of old cake flour so we used that instead of the AP and added a smidgen more liquid to make up for the extra flour, using some of that juice we drained off the pineapple earlier.  I like raisins so we added a handful of those, as well.We used canned frosting and garnished with toasted hazelnuts and coconut flake.  We made 2 ea 8″ rounds but didn’t stack them – just treated them as 2 separate cakes.
