The rice and bean dish was from this recipe, modified a tad. I used chicken stock and went half black beans and half red, and added a good squeeze or two of lime juice from a green bottle. Sue me.
The meatloaf was an experiment: Half pork and half beef, with a big slug of mayo and milk, lots of bread crumbs, 2 eggs, ketchup, bbq sauce, and minced onions, garlic, carrots, and celery that had been sweated down in olive oil. It ended up disconcertingly homogeneous and colored strangely but it tasted pretty good.
