These are batter dipped and then rolled in panko. I used a beer batter (Miller Light) that I found in a Youtube search. The panko was me going all why not? It turned out pretty well although my batter was just a tad too thick.
I started out looking for something to do with all the dill I have growing on the patio.I was thinking along the lines of grilled tilapia with butter and dill but got sidetracked when I saw mention of a lemon dill tartar sauce. The crispy fried fish was a part of that rabbit hole.
The onion rings were a literal last minute thing when I saw how much batter I had left over. The rings really needed a little more time to dry out on a rack but they worked well enough.
