I can’t say I followed a recipe for this. I cut up a whole chicken, dumped it into a bowl and added plenty of curry powder, paprika, red pepper, garlic powder, onion powder, and a couple tablespoons of garam masala that was left over from something else.
I covered the bottom of the pan with potatoes and onions, placed the chicken on top, and baked for 30 minutes at 400° until the chicken had some good color. Mixed a can of coconut milk with a can of crushed tomatoes and poured it in and baked for another 45 minutes or so. I wish I had used all thighs for this, the breast meat was too dry which was a surprise given that it was basically braised in liquid.
All in all it was just OK
