Tacos

These are using the pork leftover from the posole. The tortillas are small flour ones called street taco size and they work well enough although they do not lend themselves to much filler. I fried them in a little oil for a few seconds and blotted them as they came out of the pan. Along with the pork these have onions, peppers, cabbage, and cotija cheese. Cotija is a crumbly, salty cheese that is much like feta.

I was getting ready to snap a picture and thought that the sour cream would not show to good effect on the white platter so I drizzled a bit of sauce on it. Not sure I like the effect – should have stirred it a little. Tasted fine. Get ready for more tacos because I’m In The Mood.
