Roast Chicken

This was a big chicken. I wanted the fryers size but they were out and subbed this roaster. Had the little pop-up temp button in the breast but I pulled that out. Spatchcocked and seasoned with garlic powder, Aleppo pepper, and smoked paprika this bird spent an hour and a half in a 350 oven.

I saved the drippings but didn’t make a gravy right away, a knob of butter worked well for the mashed potatoes. I did the sprouts on the stove top, steamed for a bit then tossed in olive oil and balsamic vinegar to finish them. A good dinner. Plenty of leftovers.
