Pork belly, slow cooked in the oven, then sliced and chopped. It fries up like bacon. These too big tortillas got a slather of flavored sour cream, lettuce, then the pork belly and a crumble of queso fresco. The cheese is much like feta but drier and saltier.
Here they are all tricked out on a plate with various dips for the chips. The beige blob between the brown and the green blobs is sour cream with just a wee dab of a sweet bbq sauce. Goes great with the pork. I wish we had tomatoes for pico de gallo but that chunky tomato salsa works.
