We’re on a roll! I made a seasoning mix for the tacos, and added ground annatto because I have some and the mix seemed to need a little more color. I keep the seasoning mix in the cupboard and every time I bring it down I add some garlic powder because you can’t have too much. I wish I could find more of the cotija cheese I have sprinkled on these. I found some at Kroger a while back but they haven’t restocked any for a long time. It’s a dry grated cheese sold in a similar cannister as the Parmesans. Keeps forever.
