They are not so blackened that my smoke alarm fired off. I did have my stove hood fan set to high. I used the leftover seasonings I made for this post.
I dried the fillets with a paper towel and sprinkled both sides a hour or so prior to grilling them on my griddle. I got it plenty hot and let them go for 3 or 4 minutes on a side, less for the flip side because the griddle was getting hotter throughout the cook. I piled some of my fermented hot peppers atop my share, Mrs J ate hers without any additions. We both liked the results. 👍👍
