Got Ribs?

Chef John’s salt and pepper ribs are a good way to go. Mix mustard and vinegar in a small bowl and brush on both sides. Sprinkle a mixture of salt, pepper, garlic powder, and onion powder and bake them for about three hours in a 300 degree oven. A foil lined tray makes clean up easier. The red tinge to the rendered fat is because I used Aleppo pepper along with fresh ground black peppercorns. Have I mentioned that I really like Aleppo pepper? LOL
