I had some crumbled meat loaf after I cut a few slices to put back as single serve lunches. I thought that this was a good way to make the crumbles more presentable for the table. We bought some shelf stable milk in the first flush of the pandemic and it was handy for this – I was out of fresh milk. I need to use the boxed milk up and set up a rota so there will be some always on hand. I went the citrate route for this, a teaspoon in a couple of cups milk. Warm it to melt your choice of cheese. I used sharp cheddar. An alternate route in lieu of the citrate is to use a slice or two of American process cheese with the cheddar so it will melt well and not separate.
