We made a trip to the local orchard stand and brought back a small sack of peaches. We went with this Chef John recipe but didn’t cook it long enough. We went by the look of the crust but failed to wait for the juices to bubble through.
It wasn’t a total loss – it ate pretty well. That evening I tried to scoop the rest into a pan to try to finish it all the way.
It wasn’t wildly successful but it did crisp up, and the peaches did yield more juice. It was actually crunchy.
