Swiss Steak

I read somewhere that someone made this so I made some, too. Alton Brown provided a refresher recipe because I don’t know how long it’s been since I’ve had any. I have a ton of gravy leftover so you will be seeing it again before long.

I worried that the carrots would be either mush or undercooked so I did them on the stove so I could be sure they wouldn’t shame me. The were perfect! Mrs J wanted to have it over mashed potatoes, that was a good call. I’m thinking we will do the leftover gravy on pasta.
