National Chicken Salad Day

I went with all the usual ingredients but decided on coarsely chopped sweet gherkins rather than regular sweet pickle relish. I did use the final, absolutely last, fresh jalapeno from my patio. It went from green to red seemingly overnight.

I added hard-boiled eggs to the salad at Mrs J’s request. The light rye bread seemed perfect for it. I had a few figs left from the cakes. I started out sucking the juicy goodness from the figs but found that the skins were perfectly edible.
