Coconut Milk Chicken

This dish needs some work. I was drawn to it because it’s an easy recipe but it really needed some more spices. I cut up boneless chicken thighs plus one breast and let them mingle with the listed spices with additional things that I had ready to hand. I wish I had added five spice or jerk seasonings or both because it was rather bland.

I browned the chicken and set it aside, then made the sauce from a can of coconut milk and a can of crushed tomatoes. Add the chicken back and make sure it cooks through. We had it over rice but it would go well with potatoes or pasta.
