I thawed a couple of chicken breasts the other day, intending to pound them flat and fry them after seeing a photo somewhere. They were huge. Pan filling huge. I cut them in half after cooking and we ate two meals out of them – this one with a simple salad and cheesy cauliflower.
The broccoli was getting old so I steamed the last of it and added a scoop of potato salad. The chicken was floured, dredged in egg, and then a flour/bread crumb mix.
