I have a friend who hunts deer on my land, he repays the favor with sausage and, this year, what is called deer bacon. I did a double-take when he said there was some in the bag he handed me yesterday. It’s definitely not deer belly. It looks like finely ground meat mixed with fat of some sort and then pressed into a block and then sliced.

It’s fragile but it does fry nicely. I suspect there is some flavoring added as it left a sticky residue in the pan. Probably sugar and salt plus a touch of liquid smoke.

It didn’t quite get crisp – I took it out when I saw the edges turning black. We liked it although we both agreed that calling it bacon is a stretch.
