It’s chicken noodle with a splash of vinegar to give it a bit of sour. I grabbed the wrong vinegar – I reached for the seasoned rice vinegar and came back with the cider variety. It worked OK. It’s garnished with fried onions, a spoon of chili oil, and a soft boiled egg. I used these noodles. Amazon lists them as unavailable but they recommend similar. I like the little bundles because they are so easy to portion out.
The cheese seeped out and formed a puddle in the middle but the pan was well enough seasoned that the cheese came out easily and clean up was a snap.
Perfect meal, and perfectly cooked eggs!

I’ve been steaming them to get that result. About 7 minutes, give or take, then cooled rapidly. I have my best luck putting in the peeled egg whole, and then slicing it while it’s floating.
