Not too much to these, I made a filling from chopped chicken, fresh peppers and pico de gallo.
The filling mix was tossed with various chili powders and other taco seasonings until the veggies sweated down a bit.
The fried tacos were filled with the chicken and sprinkled with lettuce and cheddar, Mid-West Mexican style. I like to pick one of these up, load it with a spoonful of one of the side garnishes, and bite right in. I heartily recommend getting a taco rack if you eat anywhere near as many as we do. This one really sings like a bell when dinged.
