Pork and Hominy

I bought a bag of dried hominy a while back and used some right away. I finally got around to cooking up the rest of it in the instapot because it proved to be pretty tough. It spent several hours in the cooker and never got really tender, call it al dente. I froze most of it in a plastic container. I thawed some yesterday, added some browned pork, more garlic, various chili powders, and broth and cooked it in the oven, covered, for three more hours. The hominy was still al dente. LOL The corncake was good.
