Chicken Dumplings

I’m a fan of rolled dumplings. They say these need to dry for 8 hours but who has the time? I made 3-4 hours drying time work. Do these first, before you start the chicken.

You can overcook the chicken, but it is very forgiving. I grab the leg and lift – if it comes off it’s probably done. I start testing after about an hour at a simmer. The veggies are for the broth, throw them away. Onions, carrots and celery are the classic aromatics. I usually add coriander seeds, black peppercorns, garlic, and bay leaves, too. Mrs J hauls the discards away for her critters out in the back fields.
