Pancake Pr0n

I bought some of this pancake mix several years ago and really liked it but it seemed a little too pricey so I looked at making it up myself – a copy cat recipe. King Arthur had just the recipe I was needing. I bought this malted milk powder to use in the KA recipe to make enough to fill the empty Golden Malted canister, I forget the exact amount but it was a multiple of their recipe. Their ratio of 1-1/2 cups flour, 3/4 tsp salt, 2 tsps baking powder, and 1/4 cup of the malt powder scales up to however much of the dry mix you feel you need. I usually use 1 cup of the mix, 3/4 to 1 cup of milk, a tablespoon of melted butter, and an egg all whisked in a bowl to make 5 or 6 pretty large pancakes, as in the pic above.
