I have been making my own tortillas for a while, and I can’t believe I haven’t posted a recipe for them yet. It’s pretty simple. And they taste so good.
Tortillas
- 4 cups all-purpose flour
- 2 teaspoons kosher salt
- 2 teaspoons baking powder
- 2/3 cup vegetable shortening or lard
- 1 3/4 cups hot water
skillet
Whisk together flour, salt, and baking powder. Add oil and mix until it has a grainy texture. Add water and mix well.
Knead on a floured surface for about 5 minutes, it will be sticky to start and then will turn into a smooth ball. Wrap in plastic and let rest for 10-15 minutes.
Separate into 24 pieces and roll into balls. On a floured surface, roll out thinly to about an 8 to 10-inch circle. They cook quickly, so you may want to roll them all out, placing them between parchment, so they are ready to cook.
Heat skillet and cook tortillas until lightly golden, flip and repeat on the other side. Keep warm under a dishtowel or in a tortilla container.
