I’ve been collecting kitchen scraps – peelings, onion ends and skins, etc. – in a bag I keep in the freezer until I have enough to make a nice veggie stock. I throw in chicken bones when I have them. The stock is stored in plastic containers in the freezer until I need some for a soup or whatever.
