I grabbed a smallish squash the other day and looked for recipe ideas on Youtube. Chef John had one that looked good. I made a change to his recipe owing to the lack of his preferred cheese, swapping in cheddar, but followed his recipe fairly closely.

We were well pleased with this result – two thumbs up!
