This fillet was gently cooked in butter with a lot of dried dill. It never sizzled – maybe a bubble now and again. I gave it a dash of Aleppo pepper at the table and served it with slaw and a spoon of pasta salad. We set the pan that the fish cooked in on the floor and Gabe cleaned it up. I was more than a little surprised.
